Introduction

This light and fresh side dish is easy to prepare and makes an excellent companion to a qesadilla, bean burritio, or sandwich. You can make this side dish into a light main course by simply adding black beans. Ingredients

    1 cup yellow corn kernels
    1/2 bell pepper, seeded and diced
    1 medium tomato, diced
    4 Tbs fresh cilantro, chopped
    1 tsp balsamic vinegar
    1 tsp olive oil (optional)
    1/8 tsp salt (optional)
    black pepper to taste

Directions

In a medium bowl combine corn with chopped pepper, tomato, and cilantro. (Note that you may use any color of bell pepper. Nutrition information includes 1/2 of a large yellow pepper.)

Toss with vinegar, olive oil, and salt. (Note that salt and olive oil are optional, but included in the nutrition information.) Add black pepper to taste.

*To make this side dish into a light main course add black beans.
