Ingredients

    1-3/4 cups brown rice
    1/4 cup barley
    4 cups beef, chicken, or vegetarian broth
    2 bay leaves


Directions

Pour broth into a 2 qt. saucepan, add bay leaves, and bring to a boil.
Add brown rice and barley, return to a boil, cover and reduce heat to low.
Cook 45-60 minutes, until all liquid is absorbed.
Remove from heat and allow to "rest." Fluff with a fork just before serving.

    Makes a big batch, so you can scoop some out several times. Kind of bland, so I add a bit of cayenne, or red pepper flakes. - 8/21/10

    I don't normally like the taste of brown rice and it seems to take too long to cook, but this recipe has changed my mind. I didn't use the bay leave, but made a batch and froze in individual portions to have with a quick meal. Very nice! - 7/29/07

    I made something like this myself. But it's just me at home and I had lots of leftovers. I took about a cup of leftovers and made stuffed green peppers. I took my normal meatloaf recipe and while still raw, I added the rice/barley to it. Baked the stuffed peppers for about 45 minutes .No waste. - 2/13/09
