Ingredients

    2 pork cutlets (3/4 lb)
    1 T. each soy sauce, cornstarch
    1 T. cooking wine or sherry
    1 c. onion, cut in thin half rings
    2 T. hot red peppers, finely shredded
    1/2 c. water
    3 T. soy sauce
    1-1/2 T. each: sugar, vinegar, ketchup
    1/2 T. Cornstarch

Directions

1. Pound the pork cutlet with meat mallet to tenderize. Mix the next two ingredients, place pork and marinade in gallon zip lock and set aside.
2. Heat 2 tbsp oil in a pre-heated non-stick fry pan. Fry the pork cutlets on both sides until cooked through and bolden brown, about 2-3 minutes per side depending on thickness. Remove from wok.
3. Add one more tbsp. oil to the pan. Fry the onions and peppers until fragrant.
4. Combine the remaining ingredients in a cup. Add the sauce to the pan until bubbly.
5. Return the pork cutlets to the pan, turn over a few times in the sauce.

Remove from heat and serve over rice.
