Great for a cool fall or winter evening. Great for a cool fall or winter evening.

    3/4 lb lean ground turkey
    3 Tbsp parmesan cheese
    1 egg
    1/4 C breadcrumbs
    2 Tbsp Olive Olive
    2 carrots, sliced
    2 stalks celery sliced
    1/2 onion chopped
    1 clove garlic minced
    2 tsp Thyme leaves
    4 C Chicken Broth
    1 C small shell pasta
    1 small Chiplote Pepper in adobo sauce, finely chopped


Combine turkey, parm cheese, egg & breadcrumbs in bowl. Make into approx 1" meatballs. Heat 1 Tbsp Olive Oil in large fry pan & fry meatballs until browned.
Meanwhile heat other Tbsp Olive Oil in a soup pot. Add carrots, celery & onion. Cook on low heat until soft. Season with salt & pepper. Add garlic & thyme. Add Chicken broth. When meatballs are nicely browned, add to soup. Bring to boil & add pasta and chipolte pepper. Season with salt and pepper to taste. Boil until pasta is done. Makes 8 servings
