    1 1/2 cup white flour (or wheat)
    1/2 cup vegetable oil
    1/4 cup milk
    1/2 tsp salt
    4 fresh eggs
    1 cup milk
    2 tablespoons flour
    1 teaspoon dried mustard
    1/2 teaspoon thyme
    1 cup shredded cheddar (I substituted half with parmesan)
    2 tablespoons olive oil
    1 large leek sliced very thinl
    3 cups kale, sliced very thin
    Salt and pepper to taste


Mix the flour, oil, milk and salt IN a 10-inch pie plate. Press against bottom and sides to make crust. Saute the leeks in the olive oil for 2 minutes. Add kale and saute another 2 minutes. Remove from heat. Whisk eggs, milk, flour and seasonings in a bowl, stir in cheese. Spread leek/kale mixture in crust. Pour egg/milk/cheese mixture over. Bake at 375 for 50-60 minutes

  • Loved it! I added some sausage (not healthy) and it still worked. Loved the crust (tasted like a pot pie crust). Will definitely make again! - 10/9/11
