Introduction
This vegetarian casserole looked good when I saw it in the local paper - thought I would share. Recipe originally called for reduced fat cheese. Ingredients

1 tsp olive oil
2 medium yellow onions, chopped (2 cups)
2 medium bell peppers, cored and chopped
1 Tbs minced garlic
15-ounce can black beans, rinsed and drained
15-ounce can pinto beans, rinsed and drained
14-ounce can diced tomatoes (with juice)
4-ounce can mild or hot chopped green chilies
1 Tbs chili powder
2 tsp cumin
12 white or yellow corn tortillas
2 cups grated monterey jack cheese (can use reduced fat)
Directions
Heat oven to 350. In large saucepan, heat oil and saute onions, bell peppers and garlic until soft - about 5-7 minutes. Stir in both beans, tomatoes, chilies chili powder, and cumin. Remove from heat and set aside. In 9x13 baking dish, spread half (1/2 of total) of the bean mixture. Arrange 6 of the corn tortillas over the bean mixture, over-lapping them slightly and having them come about 1" up the side of the dish. Spread with half of the remaining bean mixture (1/4 total) over the tortillas. Sprinkle with one cup of the cheese, then arrange remaining 6 tortillas on top. Spread remaining bean mixture (1/4 total). Coat one side of a piece of foil with cooking spray, and cover dish with sprayed side toward casserole. Bake until heated through and bubbly, about 30 minutes. Uncover and top with remaining cheese, and bake an additional 5 minutes more or until the cheese is melted. Serves 8

It would have been better with a little more spice and rice - 12/8/10

I just usually spice to taste, so it's kind of hard to write it down. I like things spicy too. I was trying to keep the bottom line (no pun intended) down when it came to the calories - thus no rice. You could always put it on top of some rice and count the additional. Thanks for rating!
