Introduction

Ingredients

    1 cup uncooked lentils, (brown)
    4 cups water
    1 T olive oil
    1 green pepper, diced small
    2 cloves garlic, minced
    1 T chili powder
    2 tsp. dried oregano
    1 tsp salt
    8 oz can tomato sauce
    1/4 cup tomato paste
    2 T brown sugar
    2 T apple cider vinegar

Directions

Bring 4 cups of water to a boil. Add lentils, cover, and bring back to a boil. Reduce heat and simmer about 20 minutes, until lentils are soft. Drain and set aside.

About 10 minutes before lentils are done, preheat olive oil in a soup pot over medium heat. Sauté the onion and green pepper for about 7 minutes, until softened. Add garlic and sauté another minute.

Add the cooked lentils, chili powder, oregano, brown sugar, and salt. Stir. Add the tomato sauce and tomato paste. Cook for about 10 minutes.

Turn off heat and let sit about 10 minutes so the flavors can meld. Serve over a whole grain bun.

    Huge crowd pleaser! I had my reservations as I was making it, especially when I used balsamic vinegar instead of apple cider vinegar, but I couldn't have been more pleased, and my husband and sons (ages 4 & 10) heartily approved. Thank you! - 5/23/11
