Introduction

This is super easy and delish! Put it in a larger crockpot (5-6 quart size) before you leave for work and it is ready when you come home. Plus you will have leftover roast to use another night in a stir fry. Try it! This is super easy and delish! Ingredients

    1 pork loin roast 2 - 2.5 lbs
    2 lbs red potatoes, cubed
    2 cups carrots peeled and sliced into coins (approx 1 lb)
    1 cup chopped onion (approx 1 large)
    3 cloves garlic
    1/2 cup apple juice
    1/2 cup chicken broth

Directions

Cut three slits in top of porkroast and insert garlic cloves, sprinkle pork roast with salt and pepper to taste. Put under broiler to brown a bit before putting it into the crockpot (if desired). Prepare vegetables: wash and cube potatoes, pare and trim then slice carrots. Chop onions. Put potatoes and carrots in bottom of crockpot with half of the onion. Lay pork roast on top and sprinkle remaining onion over. Pour in apple juice and chicken broth. Cover and cook on low for 8-9 hours. You can thicken juices with a little cornstarch to make a thicker gravy if desired, but cornstarch is not part of calorie count. Roast serves 10-12.
