Introduction

Ingredients

2 whole rotisserie chickens, deboned except for legs
1 bag frozen pearl onions (no sauce)
2 cups sliced mushrooms
1 clove garlic crushed, or 2 tbsp prepared chopped garlic
2 cups red wine
2 tsp dried thyme
1 tsp black pepper
1/2 cup chicken broth (or broth from rotisserie chickens)
1/2 cup tomato paste
3 tbsp flour
Directions
Layer the crock pot in the following order:
- pearl onions
- mushrooms
- garlic
- thyme
- black pepper
- chicken pieces
Add 1 cup red wine (reserve remaining cup for later) and broth. Cook on high for 2 hours and turn back to low for remaining 1/2 hour.
Remove chicken and vegetables to large bowl and keep warm. In a separate small bowl, mix 1/2 cup of cooking liquid from crockpot with remaining wine, tomato paste, and flour until smooth. Stir mixture into crock pot and turn crock pot on HIGH for 15 minutes, stirring occasionally until mixture has slightly thickened. Pour sauce over chicken and vegetables and serve.
Optionally serve over noodles, pasta, or riced cauliflower.
