Number of Servings: 6

Ingredients

    1 1/2 cups red lentils
    2 1/2 cups vegetable or chicken broth (or 2.5 cups boiling water + 1 bouillon cube)
    1 cup chopped onions
    1 cup chopped carrots
    1 cup peas, frozen
    Salt and pepper to taste


Directions

Place all ingredients (except frozen peas) in large 8-cup measure. Microwave on HIGH for about 10 minutes. Add more water (or milk) if mixture is too thick. Add 1 cup frozen peas (they cook in lentils, and cool it down so you can eat immediately). Consider stirring in juice of 1 lime, 1 tsp. olive oil, chopped parsley, and garnishing with chopped almonds.

Some variations to add for more flavor/nutrients:

Optional add-ins/garnishes:
1/2 cup chopped fresh parsley (mix in at end)

Juice of 1 lime (stir in at end)

� tbsp olive oil (stir in at end)

Finely chopped almonds (garnish)

    Very Good
    Even with all garnish proposed, its still is a bit watery. On a brighter side, it's really fast and easy to make and I'll do it again for sure. - 2/15/15

    Super easy and tasty. I substituted chopped frozen carrots for fresh and stuck it back in the microwave for a minute. - 3/30/13
