Introduction

Ingredients

1.5 lb. lean ground beef (or substitute leftover meat!)
3 c. mashed potato (leftover or fresh)
1/2 c. frozen sweet corn
1/2 c. frozen sweet peas
2 T. diced onion (optional)
1 t. minced garlic (optional)
Salt & pepper to taste
Directions
In a dutch oven, brown ground beef and pour off fat.
Add onion and garlic (if it suits your tastes) and continue cooking for another minute or two until it starts to give off a savory aroma.
Remove dutch oven from heat and preheat oven to 350.
While oven is heating, level out the beef mixture into a layer, Pour your peas and corn over the layer of beef, maintaining a level "layer".
Spoon mashed potatoes over the top of the vegetables and smooth with a spatula. Season with salt and pepper, or top with breadcrumbs.
Bake in uncovered in oven for 30-40 minutes. If you like a crisp crust on top, turn on the broiler for 2-3 minutes before serving. Makes 8 1-cup servings.
