Great on its own or as a side dish.

    1 cup quinoa
    1/2 cup dried cranberries
    1/2 cup diced red bell pepper
    1/3 cup chopped dried apricot
    1/3 cup whole raw cashews
    1 tsp lemon zest

    1 tbsp canola oil
    1 tbsp fresh lemon juice
    2 tbsp Champagne Vinegar
    0.25 tsp dried mint
    0.25 tsp dried parsely
    0.25 tsp dijon mustard


Cook quinoa according to instructions on package.
Mix together dressing ingredients while quinoa is cooking.
When quinoa is finished cooking add the rest of the ingredients, pour dressing over salad and mix. Serve hot or cold.
