Ingredients

100grams of Pumpkin, cut into small cubes
1 Cup Rocket leaves
1 Cup Baby Spinach leaves
1/2 Cup Cherry Tomatoes cut in half
50grams Danish Fetta cut into cubes
5 or 6 Kalamata Olives, pitted and sliced
1 Tbs Pinenuts, lightly toasted
Olive Oil, Balsamic Vinegar and Lemon Juice to dress salad
Directions
1. Grill pumpkin til cooked (soft and starting to brown) - approximately 10 minutes each side.
2. Prepare baby spinach and rocket leaves by washing then placing in salad bowl.
3. Add cherry tomatoes, kalamata olives, fetta, and pinenuts.
4. When pumpkin is ready, sprinkle on top of the salad while still warm, then dress with olive oil, balsamic vinegar, lemon juice and some pepper. Toss til mixed through then serve.
