Ingredients

    8oz Whole Wheat Pasta (I like Penne)
    16 oz raw Shrimp or Scallops (for lower cholesterol)
    1 can Cream of Mushroom soup
    1 or 2 cups water depending on your preference for the sauce
    .5 Cup Frozen chopped spinach
    Black Bean Garlic Stir Fry Sauce Lee Kum Kee
    Red pepper
    Garlic
    Ginger
    1 large Scallion chopped

Directions

Makes 4 servings
-2 oz pasta, 4 oz Shrimp

Boil Pasta
Combine Soup, water, black bean sauce, and Spinach in a saucepan over medium heat. Adjust water and black bean sauce to taste. Add chopped Scallions to warmed sauce.

Sprinkle raw peeled shrimp with red pepper, garlic, and ginger to taste. Heat them in a nonstick pan until pink.

Serve pasta with 1/2 cup of sauce and 4 oz shrimp (approximately 5 or 6 large shrimp)
