Ingredients

    2 Cups mashed butternut squash
    1/2 Cup unsweetened applesauce
    2 Fresh large eggs
    1/2 Cup plain fat-free yogurt
    1/2 Cup sunflower oil
    1 Cup Splenda
    1 2/3 Cups whole wheat flour
    1 teaspoon ground cinnamon
    1/4 teaspoon salt
    3/4 teaspoon baking soda
    3/4 teaspoon baking powder
    1/4 teaspoon Stevia Extract

Directions

Steam butternut squash, let cool.
Mix dry ingredients together: flour, baking soda, baking powder, salt and cinnamon. In a separate bowl, mix together Splenda, Stevia Extract, sunflower oil, eggs, applesauce and yogurt. Mash squash with a fork and fold into the egg mixture. Then combine mixture with dry ingredients.
Preheat oven to 350 degrees and bake muffins for 20-25 minutes until toothpick inserted in center comes out clean.
Makes 18 servings of one muffin each.
