Ingredients

1 lb cubed steaks (lean round beef 4 oz each)
2 c skim milk
1 cup flour
1/2 c nonfat buttermilk
1 tsp salt
1 tsp pepper
2 Tbsp canola oil
Directions
Makes 4 servings plus 4 1/4 cup servings of gravy
Dip steaks in buttermilk to coat on all sides. Combine flour, salt and pepper. Measure 1 Tbsp and set aside. Dip buttermilk-coated steaks into flour mixture so that flour sticks to all sides. Set aside on wax paper for 20 minutes. Heat large nonstick skillet on medium heat with oil. When oil is hot, add breaded steaks and cook on each side until golder. Be careful when turning so that coating does not stick to pan.
Remove from pan and set aside and keep warm. Combine the 1 Tbsp flour and skim milk in a jar with tight fitting lid and shake until combined. Raise the heat and bring mixture to a boil. Lower the heat and simmer until gravy thickens. Adjust seasoning with salt and pepper to taste. Serve gravy over steaks
