Ingredients

1 x can Light Evaporated milk
6 potatoes (with skin, cooked and diced)
100gms fat-free ham, chopped
1 tsp garlic powder
1 tsp parsley flakes
2 x Chicken Stock cubes
1 cup grated Colby or Edam cheese
2 eggs
ground black pepper
olive oil (to spray dish)
1/2 cup extra Colby or Edam cheese
Directions
1. Pre-heat the oven to 400F/200C. Lightly coat a deep dish with a spray of olive oil.
2. Boil the diced potatoes (healthier if you leave the skin on!), then drain.
3. Mix together the chicken stock cubes, the dried herbs and garlic powder. Add the 2 eggs. Lightly whisk together.
4. Pour the wet ingredients into the baking dish with ham & 1 cup of grated cheese, and add the cooked potatoes. Spread mixture out until fairly even.
5. Sprinkle the 1/2 cup of cheese over as a topping.
6. Bake in the oven at 400F/200C for around 30 minutes (or until set). Once golden brown on top & set throughout. Turn oven down to around 350F/180C.
Let cook for another 5 or so minutes.
Serve.
This is a very tasty lunch or brunch! It is a main meal.
PS: You could exchange the ham for cooked bacon, but don't forget to add the calories!
