Introduction

Straight from the famous 'French Woman Dont Get Fat' book written by Mireille Guiliano

Instructions from book:

"The juice is to be drunk (reheated or room temp, up to you) ever 2 to 3 hours, cup at a time.
For meals or whenever hungry, have some of the leeks themslves, 100-125gs at a time. This will be your nourishment for both Saturday and sunday. Sunday dinner is when you can have a small peice of meat or fish (150g) with 2 vegetables, steamed with a bit of butter or oil, and a peice of fruit"

(Of course how you use this recipe is up to you, I thought it was a good basic starter for a soup, since I love leeks so much)

Ingredients

    1kg Leeks
    Enough water to cover a large pot

    (It's suggested to add a few drops of extra-virgin olive oil and lemon juice, plus seasoning and parsley. Of course, you can flavour this however you wish!)

Directions

Clean leeks and rinse well to get rid of dirt and soil. Cut ends off green parts, leaving all the white parts plus a suggestion of green (Keep extra greens for a soup stock)

Cut the leeks into 2cm slices, put them in a large pot and cover with water. Bring to boil and simmer with no lid for 20 to 30 minutes. Pour off the liquid and reserve. Place the leeks in a bowl
