Ingredients

1 garlic clove
8 oz. canned garbanzo beans, drained (half a can)
2 T. egg whites
1 tsp. cumin
1 Tsp dried parsley
Dash Salt & pepper
1/2 Tsp. Italian seasoning
1/2 Tsp. Chili Powder
1/2 Tsp. Lemon Juice
1/2 Tsp. Baking Powder
1/8 c. Whole Wheat Flour / Bread Crumbs / Crushed crackers
1/8 C. diced scallions or onion
Directions
Preheat oven to 375. In measuring cup, measure out your eggs and add all spices, lemon juice, baking powder, and bread crumbs or flour. Set aside.
Mash chick peas in a bowl with a fork. Some "chunks" are good - doesn't need to be put in a food processor! Chop your scallion finely as well as garlic, and add to chick pea bowl.
Add egg white mixture to chick pea mixture, and combine.
Spray a baking sheet with Pam. Spoon mixture onto palms and roll into rounded balls. I made 8, about the size of a golf ball.
Bake about 15 minutes. You can flip halfway through if you'd like; I would have but I forgot! These are great with Cedar's tzatziki if you can't make your own. I had them on a salad with a Joseph's Flax & WW pita on the side. Delicious!
