Introduction

My family loves to have these out at dessert time during Thanksgiving and Christmas. These can be made without the bourbon and by substituting vanilla extract, but they're better with very good bourbon. You'll also need a little extra confectioner's sugar for rolling the balls. Ingredients

    2.5 cups finely crushed low-fat vanilla wafers (can use regular ones but they'll have more calories)
    1.5 cups confectioners' sugar
    2 Tablespoons unsweetened cocoa powder
    1 cup finely chopped pecans
    3 Tablespoons honey
    .25 cup GOOD bourbon

Directions

Combine low-fat vanilla wafer crumbs, chopped pecans, cocoa powder and 1 cup of the confectioners' sugar. In a measuring cup, blend the Bourbon and honey; stir into the dry mixture. When thoroughly blended, cover and refrigerate for an hour or more. Sift about 1/2 cup of confectioners' sugar onto a large piece of waxed paper. Form into 1-inch balls (or smaller) then roll in powdered sugar (cocoa powder can also be used). Store tightly covered in the refrigerator for a day or two to "ripen". These can be frozen. Makes about 3.5 dozen 1-inch balls.
