Introduction

I've only added this to calculate the nutritional information, rather than as a recommended gourmet delight but I'm happy to share it.

It was quite tasty and suitable for my son who needs gluten free food.

Number of Servings: 3

Ingredients

    Boneless, skinless chicken breast fillet, 2 serving
    Mushrooms, fresh, 6 medium
    Weightwatchers bacon, 4 rashers
    Green Giant Organic Sweetcorn (285g drained can)
    Basmati Rice (Sainsburys, easy-cook, uncooked), 100 gram

Directions

Spray a frying pan with one cal spray.

Add diced chicken breasts and bacon cut into strips. Stir fry.

Meanwhile add rice to a pan of boling water for 10 - 12 minutes.

Add mushrooms and drained sweetcorn to the chicken and bacon. Continue to stir fry while the rice boils.

When rice is cooked, combine ingredients and serve.

Makes 3-4 servings
