Introduction

Number of Servings: 12

Ingredients

    1 1/4 cups whole wheat flour
    1/4 tsp salt
    3/4 tsp. baking soda
    1/2 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/8 tsp. ground nutmeg
    1 tbsp. sugar
    1 large egg
    2 tbsp. Sunsweet Lighter Bake Oil Replacement
    1/3 cup molasses
    1/2 cup skim milk, with 1/2 tbsp. lemon juice mixed into it (or 1/2 cup buttermilk)

Directions

Combine dry ingredients. Mix wet ingredients in blender. Add to dry ingredients and mix just until combined. Fill prepared muffin tins. Bake at 400 12- 14 minutes for large muffins, or 8-10 minutes for mini muffins. Makes 12 large muffins, or 24 mini muffins. Nutritional information is for large muffins.
