Introduction

healthier variation to meatloaf then using mashed potatoes in the load healthier variation to meatloaf then using mashed potatoes in the load
Number of Servings: 10

Ingredients

    1 lb or so ground beef
    1 egg
    3/4 c grated carrots
    8 diced mushrooms
    3 cloves garlic
    1 onion
    a few tbsp bread crumbs (seasond for flavor)
    2 tsp worcestershire sauce
    just over 1 cup ketchup (removing 3 tbsp for topping)
    salt/pepper to taste
    1 zucchini
    1/2 red pepper
    1/2 green pepper
    1 tsp dried thyme
    1 tsp dried oregano
    1 tsp basil

Directions

chop all veggies as small as you can, saute till soft with cooking spray or a tsp water. when cool add all rest of the ingrediants together except for reserved ketchup and worcestershire. put in a loaf pan mix worcestershire and ketchup on top for a glaze. bake 1 hr or untill done....drain out any extra liquid!...
makes abutt 10 piecess depending on loaf pan
