Introduction

A delicious Greek-style soup made with lime instead of lemon! A delicious Greek-style soup made with lime instead of lemon!
Number of Servings: 10

Ingredients

    I whole chicken
    Water as needed
    3 cups chopped carrots
    3 cups chopped celery
    1 cup diced onion
    1.5 cups sliced mushrooms
    .5 lb. of orzo pasta
    2 eggs
    .3 cup lime juice
    salt
    pepper
    2 tsp. rosemary
    2 tsp poultry seasoning

Directions

Put chicken and all chopped vegetables in a large soup pot. Add water until it is 2 inches from top. Bring to a boil, remove chicken carcass and remove all meat, chop finely and place back in pot. While still boiling add orzo, cook until tender. Take 2 eggs and scramble them. Add the lime juice to the eggs mixture and beat well. Take some of the broth from the pot to temper the eggs and beat well. Add egg mixture in and stir. Remove from heat. Wait until cooled and enjoy!
