Ingredients

    Butter, 1 tbsp
    Flour, 1 tbsp
    Milk, 1%, 5 ounces
    grated parmesan cheese, 2 tbsp
    shredded mozarella cheese, 1/4 cup
    Roasted Red pepper, 1/2 cup
    Broccoli florets, raw, 1/2 cup
    cherry tomatoes, 10, cut in half
    Carrot, one large, cut into strips using vegetable peeler
    Red onion, 1/2 cup chopped
    Garlic, 3 cloves, minced
    Olive oil, 1 tbsp
    pepper, 1 tsp
    cooked shrimp, 12 large

Directions

Make white sauce--melt butter over medium heat; add flour and stir well, cook about 1 minute. Whisk in milk and continue cooking a few minutes until thickened. Add parmesan cheese and mozarella cheese and stir until melted. Set aside and keep warm. Saute broccoli, carrot and onion in skillet with olive oil until crisp tender. Add tomatoes, roasted peppers and minced garlic. Continue sauteeing a few minutes until warm. Add shrimp and white sauce. Cook a few minutes until shrimp is warmed through but not overdone. Put over angel hair pasta. Makes 3 servings, 4 shrimp each.
