Cheesy, garlicy cauliflower casserole. It's low carb and can be made with reduced fat ingredients or with full fat. Add more cheese to make it super duper cheesy. Ingredients

1 head of cauliflower
1.5 cups of grated reduced fat sharp cheddar cheese
4 tbspn of reduced fat mayonnaise
4 tbspn of light sour cream
1/4 cup of grated parmesan
1 onion diced
3 cloves of minced garlic
salt and pepper to taste
Directions
Preheat oven to 375 degrees.
Grease a 9x13 baking pan/pyrex
Makes 8 servings
Break or cut the cauliflower into bite sized florets and boil them for 10 minutes until they are soft, but not mushy. Dice the onion and cook it in a pan for a few minutes so that it gets soft, but not brown. Add the garlic in and cook it for about 30 seconds...just until you smell the garlic.
While cauliflower cooks, mix all of the other ingredients together in a bowl. When cauliflower is done, add it and the onion and garlic to the wet ingredients and mix it up. Put it in your baking dish cook it for about 30 minutes. You may want to broil it for the last few minutes to get a brown crust.
