Introduction

Ingredients

    1/4 cup good prepared pesto
    1 tbs butter
    1 tbs diced shallots
    1/2 cup sherry
    1/2 cup heavy cream
    1 tbs Light spread
    1 oz shredded romano/parmesan

Directions

Saute shallots in butter until they begin to brown. Add pesto and stir on medium heat. Once heated through, add sherry and allow the alcohol to steam for a few minutes. It may reduce slightly. Add cream and stir. Add parmesan cheese.

Heat a non-stick pan, add Light spread (I prefer can't believe it's not butter). On high heat, add shrimp and italian seasoning blend to the pan. after 90 seconds, flip the shrimp and the shrimp are complete after another 2 minutes of cooking on high heat.

Shrimp can be added to the cream sauce or it can be served separately.

Preparing your own pesto sauce will add to the prep time but may be worthwhile if you are particular about your pesto.
