Ingredients

Boneless Skinless Chicken Breast - Diced, 1 lb
Macaroni Noodles
Rotel - One can
Sour Cream - 8 0z
Velveeta 4-6 oz
Directions
Dice the chicken and cook in skillet til done, I use a little bit of water and a small amount of oil.
Once the Chicken is done add the noodles to the chicken and add water to just cover the noodles
once the noodles are done drain water if any remains
Add the Velveeta, diced up and the can of rotel undrained
mix...Once velveeta is melted add the sour cream

What about whole grain pasta, lite or fat free-sour cream, and lite Velveeta?? - 11/17/09

Thank you for the suggestion, I think this recipe would still taste just as good with all these things and I think I will try it next time to make it healther because it is a family favorite around here.

I used light sour cream and 2% velveeta to try and make this dish healthier. I found it was lacking in flavor (could be because of those reduced fat ingredients). It was a little spicy and this recipe did make a lot! Maybe will try it next time with the original ingredients. - 1/5/10

I do use the 2% velveeta as well. But I don't use the light sour cream - I don't think that would make much of a difference in taste though.
