Introduction

I use this when I am in a hurry or just want something light on a hot day. My husband also likes it in his work lunch. It's fast and easy. I use this when I am in a hurry or just want something light on a hot day. My husband also likes it in his work lunch. It's fast and easy.

Ingredients

    1 package Reggano Pasta Salad-Parmesan flavor (or you can used any brand parmesan pasta salad mix package)
    Frozen peas-1/2 cup
    Cherry tomatoes-10, halved.
    Celery-2 stalks, chopped
    Baby carrots-8 Julienned
    Chicken breast meat, 9.75 oz can, 98% fat free, drained
    Mayonnaise-light 1/2 cup

Directions

Make pasta salad according to package directions but add 1/2 cup frozen peas to boil with the pasta.

While pasta is boiling: Mix cherry tomatoes, celery, baby carrots and chicken meat into large bowl. (vegetables together should make two cups)

Mix 1/2 cup light mayonnaise with the salad seasoning and let stand.

After pasta is soft, drain and run under cold water until cool to touch.

Mix pasta with vegetables and add dressing mix.

Makes 6, 1-cup servings. Great for a meal in a bowl.
