Introduction

I made up this for appetizer to take to a party for a friend who cannot eat garbozo beans due to having gout. The white beans make a very smooth and creamy textured hummus. Several people asked for the recipe. I make it all the time to pack for my lunch on the go- along with some cut up celery, green/red peppers and cucumber. It keeps in teh fridge for a week or longer. Ingredients

    3 cans Great Northen white beans, drained
    the juice of 3 large lemons
    3 Tbs (or more) Tahini

    garlic, peppers, herbs to taste

Directions

Open 2 cans of Great Northern white beans, drain and mash in a food processer. Add tahinin and lemon juice. Add salt and pepper to tasts, along with any fresh herbs (cilantro- parsley- rosemary) you are fond of. Chill and serve with pita, celery, cucumber slices.
