Introduction

Even better in a dutch oven over a campfire! It's a hearty, thick casserole-like meal that really 'sticks to your ribs' without a lot of calories. Ingredients

    3 chicken breasts, seared with salt and chopped into bite-sized chunks
    5 stalks celery, chopped
    1 small onion, chopped
    2 bay leaves
    2 branches fresh thyme
    1 branch fresh rosemary
    2 cups wild rice
    1 small can of Campbell's 98% fat free cream of chicken soup + 1 can water
    4 cups water
    4 chicken bullion cubes

Directions

Combine cream of chicken soup with 1 can water, add bullion cubes. Add 4 more cups water. Add in wild rice. Sear the chicken breasts with salt in a frying pan (or other spices if desired), then chop up and add to crock pot. Toss in bay leaves, fresh thyme and rosemary, chopped onion and celery. Cook on high for 4-6 hours, or until chicken and rice are fully cooked.
