Introduction

Ingredients

    Chickpeas 1lb. dried
    Spinach, fresh, 1 bunch
    2 slices sourdough bread
    Few strands Saffron
    2-3T Olive Oil
    3 cloves garlic
    1 medium onion
    Salt
    Pepper

Directions

Add garbanzo beans, 1 clove garlic, onion to pot - fill with water and soak beans overnight. Remove onion and garlic, add 1 t salt and 1 t pepper -- bring beans to boil, turn to medium and cook 1 to 11/2 hours or until beans are soft.

Rinse spinace and remove stems, set aside.
Cube bread. Set aside. Mince garlic.
Heat 2 T oil and cook garlic and bread cubes until golden.
In a blender pulverize cooked bread/garlic mixture; add few strands of saffron and 1 cup of broth from soup mixture. Combine until liquified--add to soup mixture.
Heat remaining olive oil and saute spinach. Add to soup mixture during last ten minutes of cooking. Salt and pepper to taste.

Serve with crusty bread.
