Ingredients

    2 pounds of grass-fed beef
    2 Tbsp. whole wheat flour
    3 Tbsp. canola oil (or similar)
    1 tsp. salt
    1/2 tsp. pepper
    3 cups water
    2 medium onions, chopped
    8 medium carrots, chopped
    6 medium potatoes, chopped
    3 stalks celery, chopped
    1 beef bouillon cube
    1 Tbsp. dried parsley
    1 or 2 bay leaves

Directions

Dredge beef in flour. Heat oil in pot or dutch oven and brown beef on all sides. Add water, bouillon, salt, pepper, parsley, bay leaf, onion. Simmer 1-2 hours until beef is tender.

Add vegetables and simmer 45 minutes or until vegetables are tender. Add flour to thicken as desired.

Makes about 10 1-cup servings.
