Ingredients

6 - Boneless chicken breasts, does not have to be thinnest cut
1 - Package of Fresh Spinach (10 oz or larger)
6 - Slices of Italian Parma Ham (any ham or substitute roasted red peppers)
1 - tbsp of Garlic Pepper grinder or substitute garlic powder and black pepper
1/2 - cup white cooking wine (or any white wine) can substitute chicken broth with a bit of lemon juice
1-1/2 to 2 cups of part skim shredded mozzerella cheese
Directions
Preheat oven to 350
In a 9 x 13 non stick bakeware pan:
Place washed and drained spinach in the bottom of pan
Place Chicken Breasts over spinach
Pour White Wine over top of Breasts
Sprinkle each breast with Garlic Pepper mixture (or any other seasoning of choice)
Put one slice of ham (or roasted red pepper) on each chicken breast
Sprinkle Mozzerella cheese over the top of everything and then place pan in preheated oven, depending on thickness of breasts, check at 30 minutes, should be done, you don't want to overcook, so if using thin cutlets, check at 25 minutes (not longer than 35)
Makes 6 servings (one breast per)
