Introduction

Ingredients

    2 c. Medium Grain Brown Rice
    4 c. chicken broth
    1 t. olive oil
    1/2 t. salt
    4 T. finely chopped Kalamata black olives
    2 green oinions, finely chopped
    2 T. chopped fresh mint leaves
    2 T. chopped fresh parsley leaves
    lemon zest from 1/2 lemon finely chopped

Directions

Place rice, broth, salt, and olive oil in a large saucepan with a lid. Bring to a boil. Decrease heat to low and allow to simmer about 30 minutes or until rice is tender and all broth is absorbed by rice.

Fluff rice with a fork and toss in a large bowl with remaining ingredients. Serve warm or at room temperature.
