Introduction

This recipe was from a friend who was a superb cook. It's been a favorite of mine for many years -- it's quite wonderful! I never thought of it as "low cal", but for this quality pasta dish, it's very reasonable. Don't substitute dried pasta (it will increase the calories, for one thing!) or canned tomatoes ... the fresh pasta & fresh tomatoes are essential to this great dish! Ingredients

    1 (9 oz) pkg Safeway Select Fresh Linguine
    2 (6.5 oz) cans Snow's Chopped Clams, drained
    3 T fresh parsley, chopped (or 1 T dried)
    1 lb tomatoes, skinned, seeded & chopped
    1 T capers, finely chopped
    2 cloves garlic, minced
    3 T olive oil

Directions

Cook pasta according to pkg directions. While cooking, start the sauce.

Place oil in large frying pan. When hot, add capers & garlic & saute gently -- don't brown.

Add tomatoes & parsley & cook 5 minutes over gentle heat.

Add clams to tomato sauce -- season with salt & pepper, if desired. Cook uncovered to heat clams

Pour sauce over drained pasta & toss to blend.
