Ingredients

    * 2 onion, peeled and halved
    * 6 cups dry pinto beans, rinsed
    * 1 fresh jalapeno pepper, seeded and chopped
    * 4 tablespoons minced garlic
    * 3 tablespoons salt
    * 1 tablespoon fresh ground black pepper
    * 2 teaspoon ground cumin, optional
    * 18 cups water

Directions

1. Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
2. Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.

    Did the same as above - cut everything in half and made whole cup portions. Delicious and WAY less sodium than from the can! - 7/25/10

    I love this recipe! I cut everything in half (1 onion, 3 cups of beans, 9 cups of water, etc.) except I use a whole jalapeno and add paprika. I drain the liquid and use a hand mixer to mash the beans. - 7/7/10
