17.1 grams of fiber per 92 calories - need I say more! great to have on hand. I freeze in little containers so I always have a satisfying thing to dunk my veggies in. Also works with roast type dinners. A little smear as a sauce works brilliantly. Simple. Lovely. Ingredients

    1 pound dried white beans
    I onion, sliced
    4 whole cloves garlic
    2 sprigs rosemary, needles stripped and finely chopped
    4 sprigs thyme, leaves stripped and finely chopped
    Salt and pepper to taste

Directions

Soak beans overnight.

Rinse and drain.

Dump beans garlic and onion in slow cooker. Cover with 1.5X level of water.

Cook on high until beans are mushy. Usually just for the workday

Blend with immersion blender. Add fresh herbs and season to taste.
