Introduction

Ingredients

    2 29oz cans Cut yams
    1/4 cup orange juice
    1/2 cup flour
    1/4 cup corn starch
    12 packets sweet'n'low
    1 tsp cinnamon
    dash salt
    3/8 cup extra virgin olive oil
    marshmallows for topping

Directions

combine juice from canned yams (sweet potatos), orange juice, flour, corn starch, sweet'n'low (or other non-sugar sweetner), cinnamon, a dash of salt and olive oil in sauce pan. heat to gentle boil. pour over yams (in a 9 x 16 baking dish). heat in oven at 350 for 30 minutes. top w/ marshmallows and broil until browned. *watch very closely, takes about 2 minutes.
