Introduction

This is a delicious once in a while treat. I told my husband, I basically just made it up and he said, "We'll see", meaning the taste. Well, he thought it was really good! Number of Servings: 16

Ingredients

    -1 Keebler Ready Made graham crust, reduced fat
    -1 1/3 less fat 8 oz package of cream cheese
    -8 oz of solid packed pumpkin, like Libbys
    -1/3 C sugar
    -1/2 t ground cinnamon
    -1/4 t ground ginger
    -1/4 t ground nutmeg
    -1/4 t salt
    -1 serving (equiv. to 1 egg) or 3 T Egg Beaters Whites Only

    -6 oz or 3/4C Fat Free evaporated milk (I used Walmart brand)

Directions

--Cream together all ingredients except the evaporated milk in a medium bowl with a mixer until well blended. Slowly add in the evaporated milk.

--Pour into the ready made crust and cook at 425 degrees for 15 minutes then reduce to 350 and cook for another 50-55 minutes or until a knife in the center comes out clean. Cool on a wire rack for 2 hrs.

--Makes 16 servings.

    This sounds very good. I am having company tomorrow and I will try it - I have all the ingredients. I like to eat pumpkin this time of year so this will be a nice way to include some pumpkin. Thanks. - 10/26/09
