Ingredients

2c whole wheat flour
1 1/3 c rolled oats
1tsp baking soda
3/4 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cardamom* (optional. you could also add allspice, pumpkin pie spice, ground or fresh-grated ginger...)
1 1/3c sugar
2/3c veg oil or non-hydrogenated vegan margarine
1.5 tbsp agave syrup
1c pumpkin puree (fresh or canned)
1tbsp vanilla extract
1tbsp ground flax seeds (optional. makes cookies more chewy. this recipe analysis is without flax seeds.)
1c crushed raw walnuts
Directions
Preheat oven to 350 fahrenheit. Mix dry ingredients (flour, oats, soda, salt, spices), mix wet ingredients seperately in a bigger bowl (sugar, magerine, agave, pumpkin, vanilla, flax if using).
If you're using fresh steamed pumpkin, try to press the excess water out. It tends to have a much higher water content than the canned stuff. If using canned, find an organic 100% pumpkin puree. It will give you delicious results.
While stirring, add dry ingredients into wet ingredients in 3 or 4 sections. put spoonfuls of dough onto cookie sheets, and press them flat with a fork. (they will not rise or spread much, so you can place them pretty close on the tray.) Bake at 350 fahrenheit for about 16 minutes. It will make about 40 cookies.
