Ingredients
Butter, salted, 0.50 stick
Regular 1% or Light Soy Milk 1.75 c (I use half of each)
Cinnamon, ground, 0.50 tsp
Nutmeg, ground, 0.25 tsp
Salt, 1 tsp
Flaxseed, 0.67 tbsp
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Honey, 0.25 cup
Grade A Extra Large White Eggs, 3 serving
Country Choice Organic Old Fashioned Oats, 0.25 cup
Whole Wheat Flour, 1.75 cup
White Cornmeal, 5.30 tbsp
Directions
Makes 9-10 pancakes. 1 pancake is equal to one serving
Whisk together all dry ingredients. In a seperate bowl whisk together wet ingredients (helps to warm up the honey a bit before adding to mixture).
Spray pan with olive oil cooking spray or use butter (not included in calorie count) Heat griddle or pan to med-high heat (approx 325-350 degrees). Pour about 2/3 cup of mixture for each pancake onto desired cooking surface. Sprinkle batter with frozen or fresh blueberries if desired. When small bubbles begin to appear, flip pancake and cook a few more minutes. These pancakes are thick and take a few extra minutes to cook but they're worth it!
