Ingredients

* Eggs, fresh, 4 large
* Spinach, fresh, 1 cup
* Carrots, raw, 1/2 cup, grated
* Garlic, 4 tsp
* Canola Oil, 1/4 cup
* Ham, extra lean, (5% fat), 4 slice (6-1/4" x 4" x 1/16")
* Feta Cheese, 1/3 cup, crumbled
* Chickpea Flour (Garbanzo Bean Flour), 2 cup
* Baking Soda, 1 tsp
* Baking Powder, 1 tsp
Directions
Food processors work well for this. :-)
Mix eggs, garlic and oil. Throw in ham slices, feta, grated carrot and fresh spinach; process until colorful. Add chickpea flour, soda and powder then mix until just blended.
Heat fry pan on med heat (use margarine for non-stick pan) and drop your pancake mix in a quarter cup at a time. Brown on both sides and serve warm or cold.
