This is a recipe that is made for 1 person but can easily be made for more people by simply multiplying the number of people you wish to cook for by the ingrediant amounts! Ingredients

1 egg or egg white
2 ounces of left over turkey
1 cup of rice
Bean sprouts 1/4 cup
Water Chestnuts 1/4 cup
Bamboo Shoots 2 ounces
And other Chinese veggies to taste
Directions
Cook rice per directions and sit to one side.
Cut turkey into small bite size pieces.
Drain Bean sprouts, water chestnuts and cooked bamboo shoots and any other veggies you want to add, a Chinese veggie mix is good in this.
Take egg and mix with a whisk then pour into non stick or lightly oiled skillet or wok.
Scramble egg with fork into smaller seperate pieces until close to done then add rice and turkey.
Cook mixture, stiring frequently for 2 minutes then add veggies and continue to cook until rice begins to lightly brown.
If cooking for more than 1 person increase cooking time. Only use 2 eggs per every 4 people.
