So easy to make and it comes out moist and delicious. Everyone in my family eats this up without a clue to how heatlhy it is. So easy to make and it comes out moist and delicious. Everyone in my family eats this up without a clue to how heatlhy it is.

Ingredients

    1 cup whole grain cornmeal
    1 cup whole wheat pastry flour
    1.5 cups low-fat buttermilk
    1 tsp baking powder
    .75 tsp salt
    .5 tsp baking soda
    1/4 cup sugar (can easily reduce to 2 Tbsp)

Directions

combine dry ingredients. Add in buttermilk and mix until wet. Coat a non-stick loaf pan with cooking spray and bake in a preheated over at 425 degrees for 25-30 minutes or until toothpick comes out clean.
