I changed her Poor Man's Meal up a bit to be a bit healthier by substituting hot dogs for sausage and using red potatoes and a sweet potato vs white. My dad makes fun of me and calls this "The Yuppie's Poor Man's Meal."

Number of Servings: 6

Ingredients

    1 large sweet potato, cubed
    6 red potatoes, cubed
    Package of Trader Joes Sweet Apple Sausages (5), chopped in small bits.)
    Olive Oil, 3 tbsp
    half of an onion, chopped.

Directions

Put the oil at the bottom of a pan. Warm it up. Add chopped veggies and sausage. Coat well. Stir here and there until the potatoes and onions have brown spots on them. When the onions are clear, add enough water to cover the potatoes. Turn the heat down a little bit, and let it simmer until the water has reduced itsself to resemble a "gravy". By then, the potatoes should be done.
Makes about 6 servings.
