Ingredients


    Baking Soda, 2 tsp
    Boiling water, 1 cup

    * *Whole Wheat Flour, 2.5 cup
    * Ginger, ground, 2 tsp
    * Cinnamon, ground, 1 tsp
    * Cloves, ground, .5 tsp
    * Nutmeg, ground, .5 tsp
    * Salt, .5 tsp
    * Baking Powder, 2 tsp
    * Olive Oil, .25 cup
    * Cream Cheese or sour cream, .25 cup
    * Brown Sugar, .25 cup, packed
    * *Molasses, blackstrap, 1 cup
    * Egg, fresh, 2 large

Directions

Mix baking soda and boiling water; set aside.
Mix flour with spices, salt and baking powder.
Beat together oil, cream cheese or sour cream and brown sugar. Add and beat molasses, then soda & water mixture, then eggs.
Stir in flour mixture. Stir until blended, then spoon or pour into muffin cups. Bake in 375F oven for 20 minutes or until done.
Makes 18 muffins.
