Ingredients

1/4 c canola oil
1/4 c unsweetened applesauce
1/2 c dry, unsweetened cocoa powder & 2 tblsp. canola oil
1 cup Splenda Brown Sugar Blend
1/4 c. egg beaters, or 1 egg (nutrition info based on egg
beaters
t tsp. vanilla
1/2 buttermilk or sour milk ( I use 1/2 c. sour skim milk)
2 c. sifted, all purpose flour
1 tsp. baking powder
1/2 t. soda
1/4 s. salt
1/2 cup chopped walnuts (toasted, if desired)
1 c. choc. chips
Frosting:
1 tblsp. spreadable butter with canola oil
1/2 cup chocolate chips
1/2 tsp. instant coffee poowder
Mix together canola oil and cocoa powder. Stir in brown sugar baking blend. Beat in egg, vanilla, milk and applesauce.
Sift together day ingredients and add to chocolate mixture. Stire in nuts and 1 cup chocolate chips. Drop from teaspon on greased cookie sheet. Bake at 375 degrees for about 10 minutes. Remove form pan and cool. Frost with Mocha Frosting.
Mocha Frosting:
Melt together 1 tblsp. spreadable butter, 1/2 c. chocolate chips and 1/4 to 1/2 instant coffee powder. Mix in 1/2 c. powdered sugar or amount to make good drizzle consistency. Drizzle over cookies.

Makes about 3 dozen cookies.
I have just converted a family favorite cookie recipe to a lower carb and fat version. Have not tried to make them yet, but I'm on my way to do just that right now. Hope they turn out yummy!
