Introduction

Ingredients

    1.5 cups of stone ground grits*
    1 extra large vegetable bouillon cube
    4.5 cups water
    2 chopped Aidell's Andouille sausage
    10 oz of frozen, peeled, deviened raw shrimp
    2 cloves of garlic, minced
    3/4 cup of frozen sweet pepper and onion blend
    1 tblsp of chilli seasoning
    1/2 cup of fat free shredded cheddar
    1/2 cup of fat free shredded mozzarella
    3 tablespoons of light butter
    salt, and siracha to taste

    *I feel that regular would work, but I recommend getting the stone ground, the flavor is incredible. Anson Mills and Callaway Gardens sell them online.

Directions

Add grits, bouillon, water and chopped sausage to crockpot. Cover and cook on low for 4 to 5 hours, check periodically to see if you need to add more liquid, stirring occasionally.

About two hours before you intend to serve the shrimp and grits, sautee the grits, garlic and pepper and onion blend in chilli seasoning. Add mixture to crockpot, add both cheese and butter. Cook for another 2 hours, or more, the recipe is very forgiving and can wait until you are ready to eat. Before serving check to see if more salt or siracha sauce is needed. We like ours spicy!

It makes 4 generous servings, or you could do 6 servings with a lower calorie vegetable side, say steamed broccoli, or a small salad.
