Introduction

Ingredients

    1 lb sausage, cooked and rinsed/drained. (can substitute ground turkey or ground beef)
    4 cups water
    1 can 15-16 ounce diced tomatoes
    1 can (15-16 ounce) pumpkin puree
    1 26 ounce can spaghetti sauce
    16 ounce pasta, uncooked

Directions

Brown the sausage (or ground beef or turkey) in a 1 inch skillet. Drain and rinse with hot water to remove excess fat from the meat. Pour in all remaining ingredients except pasta, stir together. Taste and adjust seasonings if needed (I sometimes add garlic powder or Italian seasoning). Bring to a boil, turn down heat to medium-low, cover, and simmer 15 minutes or until pasta is tender. Makes approximately 12 one-cup servings.
